Prepare & Marinate
5 minMix the chicken with turmeric, chili powder and salt and set it aside while you slice the onions.

Brown the Onions
7 minHeat 4 tablespoons of oil, add the bay leaves and sliced onions and fry patiently until deep golden.

Add Ginger, Garlic & Tomato
4 minStir in the ginger and garlic paste, then the chopped tomato. Cook until the masala turns thick and glossy.

Add Chicken
6 minAdd the marinated chicken and stir on high heat so the pieces sear rather than steam.

Bhuna Slowly
10 minAdd 100ml water, cover and cook on low, opening every few minutes to stir and scrape the base.

Finish with Garam Masala
2 minSprinkle garam masala and slit green chilies, stir once and rest the pan off the heat for a minute.
