Method

    Prepare & Marinate

    Mix the chicken with turmeric, chili powder and salt and set it aside while you slice the onions.

    Brown the Onions

    Heat 4 tablespoons of oil, add the bay leaves and sliced onions and fry patiently until deep golden.

    Add Ginger, Garlic & Tomato

    Stir in the ginger and garlic paste, then the chopped tomato. Cook until the masala turns thick and glossy.

    Add Chicken

    Add the marinated chicken and stir on high heat so the pieces sear rather than steam.

    Add 100ml water, cover and cook on low, opening every few minutes to stir and scrape the base.
